Curious as turning a "presentation area" from complete fog free to becoming blanketed in fog rather quickly. I saw something at a night club once that was mounted in a ceiling it actually looked like some sort of pressurized cylinder that then released a huge ton of fog. This is what I'm looking for. Any ideas?

A quick addition to Rob's post.
If your using a dry ice machine, break the dry ice into gravel sized pieces from the block. More surface area = More reaction = More smoke quickly.

There are You Tubes of this thing in use, and I've filled the better part of an acre outdoors in about 30 seconds.
When set to "max", it really does feel like it's shooting right out of a compressed tank of pure fog. It has a huge heater element that just keeps going.

Hmmm, good suggestion... these things are relatively cheap... $500-600ish. I was expecting them to be alot more.

Sounds like what you might be look for is what a CO2 jet or commonly referred to as "Cryo".
Le Maitre makes a unit they call an Ice-Jet which connects to various sized liquid CO2 tanks. This unit or something much like it is probably what you saw at the event you speak of.
